This is an unprocessed, raw olive product — it is shipped exactly as harvested from the tree and is not ready to be eaten directly. It must be processed at home by scratching or brining to remove its bitterness.
About the Product
We harvest our traditional Ayvalık variety olives from our organic orchards in Karaburun. They are grown using ETKO-certified organic farming methods, without the use of any chemical fertilizers or pesticides.
Harvest and Delivery
Harvesting will begin in October. This product is available for pre-order; your order will be shipped within October, once the harvest is complete. As this is a fresh product, shipping days are scheduled according to the harvest calendar.
🫒 Cracked Green Olive Recipe
Ingredients
- 2 kg green olives
- 2 liters of drinking water
- 4 tablespoons of rock salt
- 1/2 cup vinegar
- 1 teaspoon of citric acid
- Optional: 1 teaspoon of sugar
Instructions
- Wash the olives.
- Make 2-3 knife slits on each olive.
- Place the olives into a jar and cover them with drinking water.
- Change the water daily to draw out the bitterness. Taste them after about 7-10 days; once the bitterness reaches your desired level, proceed to brining.
- For the brine, mix the rock salt, citric acid, and vinegar into 2 liters of water and stir well.
- Drain the olives, return them to the jar, and pour the prepared brine over them. It is important that the olives remain completely submerged in the brine.
- Close the jar and keep it in a cool, dark place.
- You can start eating them after about 2-3 weeks. The flavor will deepen the longer they sit.
Pro tip: To minimize darkening, place the olives in the brine as soon as possible after taking them out of the soaking water. You can also place a clean weight on top of the olives inside the jar to ensure they stay submerged in the brine.
Storage
It is recommended to process the olives as soon as possible after delivery and to store them in a cool, dry place until processing begins.
