🫒 Scratched Green Olive Recipe
Ingredients
- 2 kg green olives
- 2 liters of drinking water
- 4 tablespoons of rock salt
- 1/2 cup of vinegar
- 1 teaspoon of citric acid
- Optional: 1 teaspoon of sugar
Instructions
- Wash the olives.
- Scratch each olive in 2-3 places with a knife.
- Fill a jar with the olives and cover them with drinking water.
- Change the water daily to draw out the bitterness. Taste them after about 7-10 days; once the bitterness is gone according to your preference, proceed to brining.
- For the brine, mix the rock salt, citric acid, and vinegar into 2 liters of water and stir well.
- Drain the water from the olives, pack them into a jar, and pour the prepared brine over them. It is important that the olives remain completely submerged in the brine.
- Close the jar and keep it in a cool, dark place.
- You can start eating them after about 2-3 weeks. The flavor will develop further the longer you wait.
Tip: To minimize darkening, place the olives into the brine as soon as possible after removing them from the water. You can also ensure they stay submerged by placing a clean weight on top of the olives inside the jar.
Storage
It is recommended to process the olives as soon as possible after delivery and to keep them in a cool, dry place until processing begins.
